- Celis Brewery - SAMPLE ITINERARY - In the Spring of 1992, Pierre Celis traveled from Belgium to the United States to establish a new brewery in Texas. Unbeknownst to many, he carried something very precious, hidden in his tube socks: the original yeast strain he had used to brew his renowned Belgian-style Wit beer for 30 years. He was determined to brew with it. Today, Celis Brewery, now owned by Pierre’s daughter Christine, and their flagship Celis White are an Austin staple.
