Unforgettable - Sitting on a rooftop in Chefchaouen was one of those moments where everything just felt right. The air was cool, the whole city was that dreamy shade of blue, and a steaming clay tagine was placed right in front of me. It was packed with carrots, potatoes, and zucchini that had been cooking so long they basically melted in my mouth. The smell of ginger and cumin hitting the fresh mountain air was incredible. The best part was skipping the fork and just using the bread. I’d tear off pieces of crusty, round Khobz to soak up the thick, spiced sauce at the bottom. I also had some Msemen, which was warm, chewy, and oily with all those delicious layers. Using the bread to grab a piece of soft vegetable and a salty olive was pure heaven. It felt so honest and grounded—just me, the view, and a really amazing, simple meal.
