Stepping into the Roe & Co Distillery felt like stepping into a time capsule, where the echoes of Dublin’s rich whiskey heritage reverberated through the walls of the former Guinness Power Station. The Liberties district, with its vibrant energy and historical charm, set the perfect backdrop for this whiskey adventure. As a former city planner, I couldn’t help but admire the seamless blend of old and new, a testament to Dublin’s ever-evolving urban landscape.

My guide for the day was a young, charismatic fellow whose passion for whiskey was infectious. His detailed explanations of the distillery’s history and the intricate process of whiskey-making were captivating. I learned about the rise, fall, and rebirth of Roe & Co, a story as rich and complex as the whiskey itself. Shaking the cocktail in a stainless-steel shaker, I felt a sense of accomplishment as I poured my creation into a glass. My guide, generous and engaging, shared his sweet-flavored cocktail with me and even crafted a signature cocktail at the bar. Three drinks in, I was delightfully tipsy, savoring the flavors and the memories of an unforgettable day.
