- Hendaye - Rising early to embark on a culinary journey through the Côte Basque, one of the most scenic regions of the Atlantic coast, is a delightful prospect. Similarly, starting the day by traveling to San Juan de Luz to visit a cheesemaker is equally appealing.

- Hendaye - Rising early to embark on a culinary journey through the Côte Basque, one of the most scenic regions of the Atlantic coast, is a delightful prospect. Similarly, starting the day by traveling to San Juan de Luz to visit a cheesemaker is equally appealing.
- Les Halles de St Jean de Luz - The ‘affineur’ is the expert who, after receiving cheese from producers, stores it until it reaches the perfect maturity for sale. In Saint Jean de Luz, a selection of cheeses specially refined by our affineur will be sampled and paired with a fine French wine from Irulegui.
- Maison Adam - Nestled by a bay, Saint Jean de Luz is a tranquil summer and fishing village. A visit to the Maison Adam pastry shop is planned, where in 1660, the famous ‘macaron’ was created. At the same time, Johannès de Suhigaraychipi, a French corsair who captured over 100 British, Dutch, and Spanish ships, was navigating the area.
- Église Saint-Jean-Baptiste - This will also be discussed during a town walk, while visiting the Church of St. John the Baptist, known for its stunning polychromed woodwork and ship miniatures, reminding us of the revered sea miracles of the past.
- Phare de Biarritz - Biarritz is renowned for many things: as Europe’s surfing gateway in the mid-50s, a pioneer of beach tourism (promoted 200 years ago!), and a sought-after destination to see and be seen. A stroll along the promenade will offer views of the sea and luxurious hotels, leading to the 44-meter-high lighthouse.
- Mercado Les Halles - A visit to the vibrant Les Halles market will provide a glimpse into daily city life and showcase the best of France: its cheeses, charcuterie, and bakeries/patisseries. If the entire trip has been awaited for gourmet shopping, now is the time. A stop at the market’s best bar will allow tasting of the renowned Arcachon oysters, prawns, and escargots (for those who not only dare to eat them but adore them), accompanied by an exquisite Bordeaux white wine (is there any Bordeaux that isn’t wonderful?).
- Hondarribia - The route concludes on the other side of the border, beyond the Bidasoa river. The last (or first, depending on perspective) city on the Spanish coast is a remarkable place with sea, river, bay, mountains, a fishing district at the forefront of global cuisine (as noted by the New York Times!), and a medieval walled neighborhood (with streets not suited for heels) at the top. In Hondarribia, some of the finest pintxos will be sampled at one of the most award-winning restaurants, and with a satisfied appetite, the differences between Basque-French and Basque-Spanish cuisine can be discussed. Such a flavorful discussion is rare. Conclusion: returning home with a full stomach and an open mind.
