Excellent introduction to Vietnamese food - Apple, our guide for the evening, was well informed, gregarious and articulate, taking care that each member of our group was looked after. I particularly appreciated the cultural background of some unusual aspects of the cuisine, such as why egg coffee came to be…. Vietnam does not traditionally have milk available (cows are not indigenous). Whipping an egg yolk into a thick custard-like consistency and adding it to coffee creates a creamy consistency very similar to that of heavy cream.

A fun experience - I enjoyed the tour a lot. We were a group of six people, Our Guide called Minh was very informative and fun. He said at the start to not be overly polite and to tell him if we didn’t like any of the dishes. You try about 5-6 different things sweet and savoury. It was all delicious apart from the dumplings in fish sauce which I didn’t like.
