Participants begin with a tasting of four different sake styles, learning to distinguish sweetness, acidity, and aromatic versus rich profiles with the help of an interactive tasting sheet.
Following this, they explore how Daigo’s climate, water, rice, and koji culture influence the sake produced by Kahoku Brewery, complemented by regional delicacies such as Daigo’s brand chicken (Shamo), dried sweet potatoes, and sashimi-style konjac.
A hands-on sake lees experience is next, featuring a naturally sweet dessert sake crafted with amazake liqueur, a traditional fermented rice drink. This highlights the Japanese philosophy of sake-making, where every part of the rice is utilized with gratitude, ensuring nothing is wasted.
The program wraps up with a casual completion ceremony, where participants receive a Sake Terroir Certificate, take commemorative photos, and enjoy a premium souvenir.
