- Bali Pulina Coffee Plantation - Kopi luwak, or civet coffee, is among the world’s most expensive and low-production coffee varieties. It is produced from the beans of coffee berries consumed by the Asian Palm Civet (Paradoxurus hermaphroditus) and other related civets, then passed through their digestive system. Civets eat the berries for their fleshy pulp. In the digestive tract, the civets’ proteolytic enzymes penetrate the beans, creating shorter peptides and more free amino acids. As the beans pass through a civet’s intestines, they are defecated, retaining their shape. After collection, the beans undergo thorough washing, sun drying, light roasting, and brewing, resulting in an aromatic coffee with significantly less bitterness. This coffee is widely recognized as the most expensive in the world, with prices reaching $350 per kilogram ($160 per pound).
