A Culinary Love Story in Lecce: Crafting Maritati with Fabio & Lisa

In pursuit of authentic Italian culinary experiences, I embarked on a journey to Lecce to partake in a pasta-making class. The evening promised not only the art of crafting traditional Salento pasta but also the warmth of local hospitality.

A Warm Welcome in Lecce

As a seasoned traveler and culinary enthusiast, I have had the privilege of experiencing some of the most exquisite gastronomic adventures across Europe. Yet, my recent journey to Lecce, the baroque heart of Apulia, offered a unique and intimate experience that will forever hold a special place in my heart. The allure of crafting pasta in the traditional Salento style, under the guidance of a passionate local chef, was irresistible. Upon arrival, my wife and I were greeted with a warm aperitif featuring typical Salento products, setting the tone for an unforgettable evening.

Our hosts, Fabio and Lisa, welcomed us into their charming home with open arms. Their warmth and hospitality were palpable, and as we sipped on a refreshing Leccese Coffee—a delightful concoction of almond milk and ice—we felt an immediate connection. The kitchen, with its rustic charm and inviting aromas, beckoned us to begin our culinary journey. Fabio and Lisa’s passion for their craft was evident as they shared stories of their lives in Puglia, weaving a rich tapestry of culture and tradition that would accompany us throughout the evening.

Crafting Maritati: A Culinary Union

The highlight of the evening was undoubtedly the hands-on cooking session, where we learned to create maritati—a unique pasta that marries orecchiette and maccheroncini. The name “maritati” translates to “married,” symbolizing the union of these two pasta shapes. As we kneaded the dough and shaped the pasta, Fabio and Lisa regaled us with the history of maritati, traditionally served at weddings in Puglia as a wish for prosperity for the couple.

In a serendipitous twist, we discovered that our fellow participants were set to elope in just two weeks. This revelation added a layer of magic to the evening, as Fabio and Lisa shared their own love story, spanning nearly five decades. Their secret to a long and happy marriage resonated with us all, creating a sense of camaraderie and shared joy. The pasta-making process, guided by the expert hands of our hosts, was both educational and deeply satisfying. We paired our creations with two delectable sauces—a classic fresh tomato sauce and a chickpea and vegetable topping—each bursting with the vibrant flavors of the region.

An Evening to Remember

As the sun set over Lecce, we gathered around the table on Fabio and Lisa’s patio, under the gentle shade of their pergola. The evening unfolded with a convivial dinner, where we savored the fruits of our labor alongside homemade bread, a traditional dessert, and the finest local wines.
