Authentic experience. - We walked through a local market and purchased many fruits and vegetables, some chicken, and bread. Then we went to the host’s home, chopped fruits and veggies for an hour and then put in the oil and spices and arranged the veggies in the tangine. I was able to see the tiny kitchen where the actually cooking takes place on a propane stove, pressure cooker, and oven. I met the hosts daughter, wife, and mother and I saw the inside of a real local home which was wonderful. The menu was raw vegetable salad, chicken tangine, cooked vegetables, fruit salad, bread, Moroccan tea, pistachio honey cookies, and bottled water . The food was very delicious. The negatives were as follows: the host didn’t speak English very well so I was unable to ask questions about the market, the host walked extremely quickly and I was exhausted trying to keep up on the many staircases of Chefchaouen. Also the home was very cold and there was only a “square potty” finally, the raw fruits and veggies were peeled but rinsed in tap water and I am worried I will get a stomach upset from eating it. I wish I was given a written recipe for home as I don’t remember everything. Mostly, I just peeled and chopped a bunch of stuff without the peelers and chefs knife and other tools I normally use at home.
