From selecting coffee cherries to roasting beans, participants will not only learn each step but also experience it firsthand, gaining an appreciation for the dedication involved in producing a simple cup of coffee.

PICKING: The adventure begins with coffee pickers carefully choosing only the ripest cherries, distinguished by their deep red hue, indicating readiness for harvest. It’s akin to picking the juiciest fruits from a tree! Using their eyes and fingers, they pluck the cherries, ensuring only the best are collected.

• Palmitas - DEPULPING: After picking, the cherries undergo processing to extract the coffee beans. This is the depulping stage, where a machine removes the outer skin and flesh, revealing the valuable beans inside. It’s like peeling away a protective layer to uncover a hidden treasure.

WASHING: Post-depulping, the beans still have sticky mucilage residue. To remove this, they are thoroughly washed with water, preparing them for the next steps. It’s akin to giving the beans a refreshing shower to ensure they’re perfectly clean.

FERMENTING: Once depulped, the beans undergo fermentation, a crucial step for enhancing their flavors. The beans, still coated with some pulp, are placed in fermentation tanks or barrels, where natural enzymes work their magic.

• Palmitas - DRYING: Next, the beans are dried by spreading them in thin layers on large patios or raised beds to absorb the sun’s warmth. As they dry, they lose moisture and develop unique flavors.

THRESHING: Once dry, the beans are ready for threshing, which involves removing the outer parchment layer. Machines or traditional methods separate the beans from the parchment.

ROASTING: The final and most thrilling step! The green beans are roasted to perfection, undergoing a transformation that releases their incredible aromas and flavors. Roasting is an art requiring precise temperature control and expertise. The beans change from green to brown, with flavors developing based on the roast level. It’s like toasting a marshmallow over a campfire, watching its color change and savoring the delicious result.
