PICKING: The journey starts with coffee pickers carefully selecting only the ripest cherries, which are a deep, rich red, indicating readiness for harvest.
DEPULPING: After picking, the cherries are processed to extract the coffee beans. During depulping, a machine removes the outer skin and flesh, revealing the valuable beans inside.

- Sabaneta - FERMENTING: Post-depulping, the beans undergo fermentation, a crucial step for enhancing flavor. The depulped beans, still with some pulp, are placed in fermentation tanks or barrels. Enzymes in the pulp break down remaining mucilage, adding complexity to the flavor profile, akin to marinating beans in a special sauce to develop unique taste characteristics.
WASHING: After the chosen fermentation time, the beans, still with sticky mucilage, are thoroughly washed with water. This cleans and prepares them for the next steps, like giving them a refreshing shower to ensure cleanliness.
- Sabaneta - DRYING: The beans are then spread in thin layers on large patios or raised beds to dry in the sun. As they dry, they lose moisture and develop unique flavors.
THRESHING: Once dry, the beans undergo threshing to remove the outer parchment layer. Machines or traditional methods separate the beans from the parchment.
ROASTING: The final and most thrilling step! The green beans are roasted to perfection, transforming and releasing incredible aromas and flavors.
