The meeting point is the renowned Palacio de Bellas Artes, where the event will commence with a short discussion on the significance of chili in Mexican culture and cuisine. Following this, participants will proceed to Mercado 2 de Abril, recognized as the first public market in Mexico City, established in 1880.

The meeting point is the renowned Palacio de Bellas Artes, where the event will commence with a short discussion on the significance of chili in Mexican culture and cuisine. Following this, participants will proceed to Mercado 2 de Abril, recognized as the first public market in Mexico City, established in 1880.
Participants will navigate the market’s aisles like true locals to select the finest chilies, spices, and other traditional ingredients. They will learn to identify various chili pepper types: ancho, guajillo, árbol, habanero, chipotle, pasilla, mulato, and more.
Subsequently, the group will head to a nearby private studio-workshop to create different types of sauces using techniques such as mashing and taming.
The experience concludes with a sensory tasting session, where the sauces will be sampled alongside traditional snacks like moles, cheeses, and fruits, all crafted to enhance flavors: sweet, salty, tangy, bitter, and smoked.
