Following this, participants will stroll to Mercado de Medellín, just a short distance from the studio. This guided market tour provides insight into everyday Mexican life and the ingredients that are central to its cuisine. Along the journey, enjoy curated tastings of native corn tortillas, raw cacao, Oaxacan chocolate, seasonal fruits, and for the daring, edible insects, a genuine Mexican tradition.
Returning to the studio, it’s time to cook. Participants will engage in a fully hands-on class, mastering four iconic dishes — from pre-Hispanic origins to the renowned White Mole, highlighted in “101 Reasons to Taste the World” by the Cook and Chef Institute.
