During the class you will learn and participate in:

The Art of the Taste : We will prepare from scratch the traditional marinade for an authentic Chicken Pibil, learning the exact balance of spices and annatto.

Cooking Techniques: We will bring the chicken to its exact point of flavor and softness.

Dough and Tortillas : You will learn to toast and cook your own tortillas by hand, the soul of any Mexican table.

Yucatecan sauces: We will make artisan sauces (including the iconic habanero and purple onion) to accompany our dishes.
