A fabulous day! Jose' rocks! - We had a lovely experience, and a very fun & delicious day. First, we were really fortunate to have a great group of relative strangers. Our host was Jose' and we felt so lucky to have him - skilled, personable and with a great sense of humor. This was so much more than a cooking class. We discussed then tasted the recipe choices, then took a short walk into the village to purchase supplies. We made two different main dishes (two moles, in our case) plus empanadas, rolling out tortillas from scratch, a salsa learning experiment, and a dessert. Beer, water and mescal available. All in a lovely garden with an outdoor kitchen. Jose' made this a really fun day. My only suggestion would be that Quinta Brava (owner) supply some sort of rough recipe to take home with us.

A cooking class for all ages and abilities! - We booked a cooking class for 2 adults and our 3.5 year old daughter. We were the only people with a child there so initially we were worried she wouldn’t be able to participate but they made her feel so special and welcome. She was able to make her own tortillas, empanadas, and dessert. It’s a really beautiful outdoor setting and you get to socialise with other like minded travellers learning to cook a Oaxacan meal. It is a long day so if you’ve got little ones, bring extra snacks to hold them over as we were there from 9-3. We thoroughly enjoyed our day and would recommend this to anyone!

Great, Worth the investment! - It was a lot of fun, we learned basic things about the process of how the dough is made for the tortillas from scratch in an ancestral way, different types of sauce preparation, the flavor and the level of spiciness that it grabs as the same ingredients are prepared, this seemed the most interesting thing we learned. It was also revealing to discover which mole is more to our liking, we tried 9 different ones! We had to be on time to go to the airport when we finished and our chef José chose which menu to prepare to be on time, everything was delicious, really very Mexican flavors, several tips of what process or ingredient helps give that unique flavor of what was made at home and ancestral, very fresh ingredients. We ate and drank without limit, we prepared empanadas of corn, teas, soup of guides, mole verde, mole pipián, accompanied by pork and chicken, for dessert molotes of banana male, beer, flavored water and mezcal. We breakfast delicious quesadilla and chocolate with water or pot coffee. The place is magical you can't imagine what's behind the access door of the street, the little farm we have loved! Super complete and very well organized, all of the first quality, we really only visited it we did not harvest anything specific to cook, but we were told that from there they get everything we prepared and what we did not, you buy in the market where we were taken to meet, a market in which literal not a fly round, everything clean, super fresh, super local. Jose bought two three things. We were given our scrub to help carry the purchase that José made, it was fun, I recommend to bring some cash to that visit because you feel like buying some fruit to eat right there short. Another thing that amused us a lot was the batten mandrel that we were lent, gives an even more Mexican touch to the experience and I kept laughing every time I saw my husband and son dressed like this, . The open kitchen is perfect, it has all the Mexican elements, very well equipped and very spacious, each one had the necessary utensils to work as a team, We had the chef was José, Mexican of mother Oaxaqueña who taught it since childhood, with a lot of experience abroad showed us his professionalism, knowledge and mastery of the subject, recipes and times. If I recommend this experience, with this company, I was analyzing several and I had doubts about which to book, I do not regret it. My family and I were happy. Thank you very much to all the team!!!! The whole show has an amazing set up.

A heavenly day of learning to cook the Oaxacan way. - We we’re taught by a gentle man named José. He was a natural teacher and had us all working at different stations after he demonstrated what he wanted us to do. We ground corn into dough using a metàte, The corn had been previously nixtalamized. We then learned to make our balls of dough into different shapes using different ingredients that we prepared. They were then put on the comal to cook. We then proceeded to make a mole using tomatoes, onions, garlic, prunes, capers, olives and herbs, We also made a delicious corn soup and a delicious fried banana desert. We learned the fascinating different ways to make salsa from hot to mild. The whole day was beautifully organised and very relaxing. I would describe this tour as over the top. Almost two wonderful to describe. Like a dream. Did I mention that we were in a gorgeous outdoor garden amongst 6 dogs and 5 cats. A wonderful woman named Vicki assisted. There was a lot going on!!!!

Loved this class! Such a great way to slow-down and enjoy Oaxaca. - Beautiful, hidden, huge garden setting hidden in a Oaxaca neighborhood. Everything is charming. The open air dining area, the kitchen, the cooking school area ... just beautiful. Our teacher was super nice. The quick walk to the market was perfect as it was a small manageable, local market. Everyone we encountered was friendly. The food we made was delicious! The nine moles we tasted before we started cooking were THE best! Very hospitable with beer, mezcal, chocolaté ... and food tastings all day. Definitely take this class .. you will love the experience! I do have two complaints: (1) I really wanted to absorb all of the history and details of Oaxacan cooking, which I missed, since the instruction was all in Spanish, even though the class was advertised as "in English"... i did finally ask the instructor if he spoke English and if he did, if he could use English ... showing him my ticket that said "English" class. He tried, but only for basic things. All the intricacies and and nuances of what he was teaching, were always in Spanish; & (2) we were told we would get recipes for all the nine moles and what we cooked from Jessica ... but Jessica never appeared, and we did not get the recipes. I loved the day and am very happy I went!

Nice way to spend the day. - This cooking class was more about collective cooking and not really learning about each step in each dish. You vote as a group on what you want to cook so it might not be exactly what you want. We did make a lot of food - tortilla, empanada, soup, four salsas, adobo and mole. Started the day with a cheese quesadilla and chocolate/coffee and walked to the local market to source ingredients (we mainly stood around while they shopped). Enjoyed that we could have a beer or mezcal while cooking. The kitchen was beautiful and they are very aware of food safety practices.
