Where Oysters Meet Eagles: A Taste of Maine You’ll Never Forget - From the moment we sat down at tables dressed with wildflowers and warm focaccia, we knew this would be more than an oyster tasting. Virginia, our oyster sommelier, didn’t just describe the oysters—she transported us to the tidal rivers where they were raised. We savored four varieties from local producers, each with its own briny-sweet character, sipped wine, watched a deer pick its way along the far bank, and looked up just in time to see a bald eagle glide overhead. Rustic, relaxed, and quietly elegant—this is Midcoast Maine at its most unforgettable.

This hidden gem is like an Oyster University! - What a great birthday experience! Even though the weather didn't cooperate, Virginia and Andi set a beautiful candlit table inside their cozy, reimagined seaside cottage and we began our local oyster exploration. Very informative but casual so many opportunities for questions, discussions and a chance to get to know other attendees. Oyster selections were varied and delicious and wine pairings were perfect. My husband has already decided this is his birthday present and we will be back for other adventures. Thank you for a great evening.

An Incredible Experience - Must Do In Maine! - Incredible and amazing experience. A beautiful scenic drive to a remote location that was such a beautiful spot on the Maine coast near Bath. A few houses in neighborhood and at some point during the dinner we either met or saw everyone because they were very friendly, were out walking around on a beautiful night, and I think they all feel a part of what Virginia is trying to build with this. Incredible wine pairings from small European vineyards and the oysters were amazing. You really get to learn all about the Maine Oyster industry, the local farms and farmers specifically, and oysters themselves. We could not recommend this experience enough and will definitely repeat.

Excellent oyster tasting experience! - This tasting was one of the highlights of our trip! Hosting couple are amazing, the location is gorgeous, the local oysters were the most delicious we’ve ever had, wine pairings & home made bread were phenomenal. Small group was great - we were seated with another wonderful couple. Awesome experience!!

Perfect Maine Experience - I was not an oyster fan but booked this experience for my husband. It was the perfect Maine experience. Virginia and her husband know more about oysters and freely share their knowledge. The oysters were amazing and fresh. They even convinced me to try some. To my surprise, the were really, really, good. The setting was also picture perfect, down to the bald eagle that flew by at the end of the tasting. What more could you ask for? Definitely worth the trip.

Amazing way to dive into the Oyster world and experience beautiful Maine - I was fed the most amazing food, learned things I never ever imagined were possible about oysters; and all this while going on little adventures that made me feel like I was kid again. (Elder millennial here) My room had a huge balcony with the most ridiculously idyllic Maine view, overviewing a working lobster-dock. I would see the lobstermen coming in and out hauling their lobster cages and working along the fishermen while flocks of birds would come to dive for fish against the most stunning skyscapes. All this visible from my balcony! I was even lucky enough to catch a lightning storm that was out of this world. Every meal was prepared with fresh and local ingredients which was obvious by the level of tastiness, Warwick who is the chef and Virginia’s husband manages to create meals that are both comforting as a home cooked meal but with an elegant fine dinning approach. Virginias knowledge about oysters is unparalleled, She sees the oysters as a creature with such infinite potential that you start to see it too. We eat oysters galore and learned hands on about oysters from inception to consumption, about flavor profiles and pairings, making me a pretty interesting person when I came back home. I am now the oyster ‘expert’ amongst my friends! In the same way wine used to be red or white, after this retreat I'm the person who is not only ordering oysters but rather a dozen Kumamoto because I think that their melon finish will pair perfectly with the house cava and can’t wait to share the world of oysters with everyone around me. PS: we saw lots of seals in the wild during our oyster farm tours!
