Producing 10,000 gallons annually and up to four types of bottled rum, it operates on a large scale, yet its processes mirror those of small-scale moonshine production.
- Fort Shirley - Located within the Cabrits National Park in northern Dominica, Fort Shirley is a significant historic site, known for the famous revolt of the 8th West India Regiment in 1802. The British primarily constructed the fort, with the French adding significant structures during their occupation from 1778 to 1784. The site includes a garrison with one fort, seven gun batteries, seven cisterns, powder magazines, ordnance storehouses, bakeries, an iron forge, barracks, and officers’ quarters, accommodating over 600 men and their support staff of artisans and slaves.
