Interesting overview of coffee history and brewing techniques - I recently joined the Pike’s Place morning coffee tour guided by Chef Eric, and it was certainly an interesting experience. Chef Eric proved to be knowledgeable about various roasting types, explaining the differences between blonde and dark roasts. His enthusiasm for coffee shone through, especially when discussing the origins of coffee in the Obsidian Empire and its journey through different cultures, including the Ottoman expansion and Dutch colonization in Java. This historical context was fascinating and added depth to the experience. The tour included a chance to sample a pour-over brewing method with Ethiopian coffee and watched a Chemex brew with Costa Rican coffee, using a precise 15-gram water to 1-gram coffee ratio. Chef Eric also touched on the differences between coffee bean types, such as Canephora and Arabica, and mentioned that the more lightly roasted coffee contained more caffeine, which was a fun fact to learn. The tour was a good introduction to Seattle’s coffee scene and various brewing techniques. If you’re curious about coffee and enjoy a quick history lesson, this tour is worth a try.

If you’re an early morning person, don’t skip this. - Eric is passionate about coffee, consistency, and relationships with vendors and roasters. Guided us through areas of the market many would not have even found, showed us three different brewing methods, and provided us tasty treats along the way.

Fantastic experience - Fantastic time with lots of history and small bites along with coffee tastings. Eric showed us different types of coffee, why it tasted the way it did and showed us little coffee shops we would not found on our own.
