The hosts will lead participants through the process of creating an authentic Maya feast: hand-pressed tortillas, a smooth sikil p’ak pumpkin seed dip, and the highlight of the day—Pollo Pibil, marinated with achiote and slow-cooked underground in the legendary pib oven, just as the Maya have done for centuries. As the flavors develop in the fire and earth, participants can refresh themselves with agua de chaya, and later celebrate the meal with a cold beer or a smooth sip of mezcal.
