Authentic balsamic vinegar is crafted from selected pressed Trebbiano and Lambrusco grapes. The resulting thick syrup, known as mosto cotto in Italian, is aged for at least 12 years in a series of barrels of decreasing sizes. These casks are made from various woods, including chestnut, cherry, oak, mulberry, ash, and juniper.
