If there is one dish that represents Xi’an, it is undoubtedly Yangrou Paomo—an aromatic, flavorful, and spicy bowl of shredded flatbread soaked in mutton broth. As a local specialty widely enjoyed in the Xi’an area, locals often say, “If you have never tried Pao Mo, you cannot claim to have been to Xi’an.” Eating Pao Mo is a uniquely enjoyable and relaxing experience. Here is the proper way to do it. Initially, you will be served two pieces of unleavened flat pita bread or “mo” in Chinese in a bowl. Then, it is your task to break the bread into pieces ranging from peanut to soybean size, according to your preference. Although time-consuming, locals believe that Paomo made by oneself tastes much better. More importantly, it is a time for people to converse and connect while sitting together and tearing the hard bread. Afterward, you should return the bowl with the shredded bread pieces, and your “mo” will be cooked in mutton soup that has been stewed all day until the bits are fully soaked in the soup’s rich flavor. The stew is cooked with mung bean vermicelli and topped with slices of lamb or beef of your choice, with pickled sweet garlic served alongside. Adding chili sauce achieves the perfect balance for the dish.
