Its architecture is a blend of African and Arab influences, reminiscent of Morocco’s Medina with its narrow, winding streets. Each evening, as the sun sets, Stone Town’s Forodhani Gardens park transforms into an open-air food market. Bypass the fish kebabs and head straight to the vendors offering urojo, a thick mango and tamarind soup served with chickpea fritters, boiled potatoes, cassava flakes, and chutney.
