Participants will use seasonal vegetables and traditional Japanese tools to learn how to create various sushi styles, each crafted with homemade seasonings and fermented ingredients.
The menu features:
Nigiri — grilled bell pepper with koji soy sauce; blanched okra with miso sauce
Hosomaki — cucumber
Inarizushi — seasoned aburaage with sushi rice, pickled ginger, and simmered shiitake
Gunkan — corn with vegan mayo and miso; okra, natto, and yamaimo with soy sauce
Chirashi-zushi — carrot, burdock, shiitake, lotus root, kabocha, and vegan ikura
Futomaki — prepared by Rei as a gift, filled with seasonal vegetables
The class starts with an introduction to the history of sushi, followed by practical instruction on sushi rice and traditional tools, including Japanese kitchen knives.
Please note: All sushi is entirely plant-based. The kitchen and tools are not exclusively vegan but are thoroughly cleaned before use.
